Bacon Jam Potato Salad

Ingredients

5 Lb small red potatoes, scrubed and cut in quarters

1/2 cup real mayonnaise

9 oz Bacon Jam or Spicy Bacon Jam

1/2 cup(s) red onion, diced

1 cup fully cooked bacon, crumbled

1/2 cup red bell pepper, chopped

1/2 cup celery, chopped

1/8 Tsp flake salt

1/8 Tsp black pepper

Preparation

Place potatoes in a large pot with 4 quarts water; bring to a boil over high heat.


Reduce heat to medium; boil potatoes 15 minutes or until tender.


Drain and set aside.


Blend mayonnaise and Bacon Jam in a large serving bowl.


Add onions, bacon, peppers, celery, salt, pepper, and seasoning potatoes; toss gently.


Serve while still warm or chill thoroughly and serve cold.
