Apple Butter BBQ Chicken

Ingredients

3 teaspoons of Knuckle Dragger from Smoked Bros

1 roasting chicken (6 to 7 pounds ... thawed) 

1 can (12 ounces) unsweetened apple juice (You will use 6 ounces)

1/2 cup Apple Butter

1/4 cup BBQ Sauce

Preparation

Prepare grill or smoker for indirect heat (225° - 250°), using a drip pan or Preheat Oven at 350°.


Prepare chicken by patting dry the inside and outside to remove excess liquid.  Mix the apple butter, Knuckle Dragger, and BBQ sauce together in a small bowl.  Stretch the breast and back skin, then apply some of the apple butter bbq sauce under the skin.  Feel free to additionally rub the whole exterior of the body with Knuckle Dragger and use any remaining apple butter bbq sauce.  


Pour half of the apple juice into another container and save.  Holding the chicken with legs pointed down, slide chicken down over the can so it fills the body cavity. Place chicken on grill or rack directly over the drip pan. 


Grilled or Smoked: Uncovered, over indirect medium heat for 1-1/2-2 hours or until a thermometer reads 165°. Combine apple butter and barbecue sauce; baste chicken occasionally during the last 30 minutes. Remove chicken from grill; cover and let stand for 10 minutes. Remove can from the chicken before carving.


Baked: Preheat the oven to 350 F. While the oven is heating up, wash the chicken breast and pat dry. Place in oven uncovered and bake. This should be approximately 45 - 60 minutes depending on oven type, however ensure that your internal temperature is 165°. Remove chicken from oven; cover and let stand for 10 minutes.
